Betty’s Sugar Cookies
Ingredients
2 eggs
2/3 cup oil
2 tsp. vanilla
1 tsp. lemon rind
3/4 cup sugar
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
Directions
Beat two eggs.
Stir in 2/3 cup oil, 2 tsp. vanilla, and 1 tsp. lemon rind.
Add 3/4 cup sugar till thick.
Then add two cups flour, two tsp. baking powder, and 1/2 tsp. salt.
Drop by spoonfuls onto cookie sheet. Smash with bottom of oiled glass dipped in sugar.
Bake 8—10 minutes at 400 degrees.
Makes three dozen cookies.
